Bunyip flour is a tolerant, extensible flour of moderate mixing requirement with minimal mechanical carbohydrate conversion.
This flour is milled from selected hard wheats, providing a dough of balanced diastatic activity, strength, extensibility and machinability, resulting in minimal absorption of juices into the crust. This flour also contributes to crust colour and crispness, particularly with thin crusts.
